TECHNIQUE: Sourced from Jalisco, Mexico, our tequila begins with non-GMO, organically fertilized agave. The piñas are harvested at peak maturity and distilled using Alambic Armagnacais, a hybrid between a pot still and a column still. After the first distillation, the product reaches 22.5% ABV and is distilled once more to reach a 55% ABV still proof. Only the “hearts” of the distillation process are kept, allowing for a purer tequila. After a few days of oxidation, the still proof tequila is transported to Islamorada, where we proof it down to 40% using century carbon-filtered water before bottling..
