TASTING NOTES: Distilled from a Grade-A Pearl Select Molasses, this rum is spice-forward with heavy nose of oak and vanilla that follows into a smooth finish. As a slightly stronger spiced rum, it is not quite as sweet as many on the commercial market.
DISTILLATION PROCESS: During the first distillation - run as a pot distillation - all of the alcohol is driven out of the fermented molasses. The resulting wash is redistilled 5x through a copper column on the second distillation run, known as the spirit run.
AGING TECHNIQUES: Aged and agitated on oak chips specially cut to bring out vanilla and cream flavor for a minimum of two weeks or until flavor is perfected.
