DISTILLATION PROCESS: Corn, malt, and rye mash create the base for this smooth, flavorful bourbon. Pot distilled for the first run and column distilled for the second creates an effortlessly polished spirit that is then aged in new charred-oak barrels for a minimum of two yearsTECHNIQUE: Sourced from Jalisco, Mexico, our tequila begins with non-GMO, organically fertilized agave. The piñas are harvested at peak maturity and distilled using Alambic Armagnacais, a hybrid between a pot still and a column still. After the first distillation, the product reaches 22.5% ABV and is distilled once more to reach a 55% ABV still proof. Only the “hearts” of the distillation process are kept, allowing for a purer tequila. After a few days of oxidation, the still proof tequila is transported to Islamorada, where we proof it down to 40% using century carbon-filtered water before bottling.
